Hey Ya’ll!
How are you doing this week? Did you do anything fun? I had one of my very dear friends come out to the farm and spend a couple days to relax and eat yummy food and enjoy conversation! You see, I love having people in our home for a lot of reasons but mainly because I get to cook BRUNCH!! Seriously though, I LOVE breakfast food so much I could eat it for every meal! Anyone else like that? I hope so because if not, you are missing out, just sayin’!
Well, while my friend Anna was here, I made a Mushroom and Spinach Frittata with Feta Cheese and it was so yummy! Making food for people makes me happy! I enjoying serving and loving others via the kitchen and dinner table so having her come and visit was such a blessing! I hope you enjoy the recipe as much as we did!
INGREDIENTS//
3/4 to 1 Cup of mushrooms (I used baby bella)
1/2 Cup frozen spinach
1/4 Cup feta cheese
1/4 Cup of diced onion
6 eggs
Olive oil
Salt and Pepper
Step one: Pre heat oven to 350
Step two: Prep your ingredients by slicing up the mushrooms, dicing the onions, and whipping up the eggs with salt and pepper, Also, grab the spinach and feta and set to the side.
Step three: Heat a large pan over medium heat. Add olive oil and 3/4 to 1 Cup of mushrooms. Cook for 2-3 minutes and add 1/4 cup chopped onions.
Step four: Cook until onions are translucent and mushrooms are browned then add the spinach. (I used about 1/2 C frozen but you can use fresh…whatever you have on hand. Remember that fresh spinach wilts down a lot so you would need more than 1/2 C)
Step five: Once spinach, mushroom and onions are ready add a bit more olive oil to the pan (1-2 TBS). Then add the feta cheese(1/4 C) to the whisked eggs (6 of them) and pour over the top and cook until it just begins to set.
Step six: Place the pan in the oven and cook until set – about 10 minutes or so.
Step seven: Place frittata on serving dish or you can serve right from the pan if you’d like! And ENJOY!
