Ingredients:
1 ¾ cups rolled oats
¼ cup ground flaxseeds
¼ cup pepitas (or other seed)
¼ cup chopped pecans
¼ cup sliced almonds
¼ cup unsweetened coconut flakes (shredded works as well)
¼ cup dried cranberries
¼ cup raisins or other dried fruit (like dried apples, yum!)
¼ cup real maple syrup
½ cup pumpkin puree
1 tsp coconut oil
1 ¼ tsp pumpkin spice
½ tsp cinnamon
teensy pinch kosher salt
½ tsp vanilla extract
Method:
Preheat oven to 325° F.
Spread the rolled oats onto a parchment lined baking sheet. Toast in the oven 10 minutes, shuffling things around halfway through.
While the oats are toasting, combine maple syrup, pumpkin puree, coconut oil, pumpkin spice, cinnamon, salt, and vanilla in a bowl. Stir until mixed well.
Remove the oats from the oven and pour them into a medium bowl Add the ground flaxseeds, pepitas, pecans, almonds, coconut flakes, and dried fruit. Stir.
Pour wet ingredients over the oat mixture and mix together with a spatula. Spread back onto a baking sheet with parchment paper and bake an additional 20 minutes, or until dry and golden.
