There is nothing quite as refreshing as lemons in the summertime! This recipe has become a family favorite and I often make the for Mother’s Day. Be very careful not to over bake the filling! You want the filling to be just set up, otherwise it will be a little “tough”. I hope you enjoy them as much as we do!
Lemon Bars
Crust:
1 cup butter, softened
1/2 cup white sugar
2 cups all-purpose, unbleached flour
Filling:
4 eggs
1 1/2 cup white sugar
1/4 cup all-purpose, unbleached flour
2 medium lemons, juiced
Directions:
-Preheat oven to 350 degrees
-In a bowl, blend together the butter, 2 cups flour and 1/2 cup sugar. Press into an un-greased 9×13 pan and baked 15-20 minutes. Let cool.
-Whisk together 1 1/2 cups sugar and 1/4 cup flour. Add eggs and lemon juice and whisk well. Make sure there aren’t any lumps!
-Pour the filling over baked and cooled crust. Bake 20 minutes (do not over bake!). Bars will firm up as they cool.
-Let cool completely, cut and serve with a generous sprinkle of powdered sugar!
TIP: You can make these ahead of time and freeze them for up to one month!
