Have you tried Chia seeds yet? These tiny seeds may seem insignificant, but they are FULL of all kinds of nutritional goodness. They are high in Omegas 3&6, antioxidants, fiber, protein, and calcium, making them the perfect addition to your diet. My favorite way to eat chia is by making “chia pudding!” It’s perfect for breakfast or an afternoon snack (and can be made with vanilla OR chocolate!).
Whisk all ingredients together really well (it may take a minute or two to get all of the chia incorporated).
Mix all ingredients well. If using cocoa, it may take a couple minutes to get it well incorporated. You may also need to add up to 1 T. more liquid if it’s really thick.
Pour pudding into a covered bowl and into the refrigerator. Let it sit until thickened. (preferably overnight, but it will also thicken in about an hour).
Now you can top your chia with all kinds of yummy toppings! My favorites are bananas, fresh or frozen raspberries, fresh strawberries, blueberries, and peaches.
