Oh you guys!!! I was just doing some artwork this morning, letting out my creative side, when I realized it’s just a few short days until we’ll all be gathering with family sharing in the sweetest holiday of celebrating all of the things we are so blessed with! I can’t wait to be curled up next to a roaring fire, playing board games, eating yummy food, and laughing with those I love!!!
This recipe is one of my go-to’s any time of year, but it’s such a fun variation of mashed potatoes, I know it will make the perfect accompaniment to a roasted turkey + gravy, or my favorite…oooh, the stuffing! Ahh. I can’t wait!!
Head to your favorite grocery store and pick up a couple heads cauliflower, chop it up, boil it till it’s soft, and smash until it’s a desired consistency. It’ll be a little “grainy”, so throw in a little cream + butter and roasted garlic, salt + pepper to taste, and if you’re feeling extra crazy, a little fresh rosemary! It’ll be a hit, I know it. :)

Smashed Cauliflower | Serves 4-6 | makes 4 1-cup servings
1-2 heads of cauliflower, 1 large one, or 2 small ones :)
Break up cauliflower into chunks, and place in a pot of boiling water. Boil until soft, like pasta :) Drain and puree in cuisinart, hand blender, or kitchen aid.
Add in ::
1/4-1/2 cup of cream (or coconut milk) OR … chicken broth
4 TBS butter, because we all need a little butter OR…1 TBS chicken stock base
2 TBS fresh rosemary
3 cloves roasted garlic, or fresh, finely chopped
salt + pepper to taste
if you want to get extra crazy, you can whip in some plain greek yogurt or sour cream for a creamier version!
Drizzle a little gravy over the top, and you have a healthy variation of mashed “potatoes”!

yay holidays! i really love cauliflower “mashed potatoes”, but i’ve never made it with garlic and rosemary, which sounds incredible. trying it next time! :)
