I don’t know about you, but I love baking! Sweets are usually high on the list of things I like to bake, with breakfast foods coming in a close second. While I usually never take the time to fix myself more than a bowl of yogurt or a smoothie most days for breakfast, I do like to mix things up a bit occasionally and bake muffins or something similar to stash in my freezer to enjoy on busy mornings when I don’t have time to bake something fresh.
The other day as I scrolled through Pinterest looking for new recipes I came across a basic muffin recipe that included various variations, and I knew I had to give it a try. The results were definitely tasty!
This recipe for chocolate muffins is super simple, easy to mix up, and offers yummy results! They are moist, subtly sweet, and really chocolate-y. I love them spread with peanut butter.
The original recipe is from http://www.handletheheat.com/ultimate-muffins/, but I tweaked it a bit.
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup white wheat flour
1/4 cup granulated sugar
1/3 cup brown sugar
1/2 teaspoon fine salt
1 tablespoon baking powder
1/2 cup cocoa powder, sifted so no lumps remain
1 1/2 cups milk (or 1 1/2 cups buttermilk)
6 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract (if desired) or 1 teaspoon cinnamon
Directions
Preheat the oven to 350°F*. Line a standard muffin tin with paper liners or coat with nonstick cooking spray.
In a large bowl whisk together the dry ingredients.
In a separate bow, beat together the liquid ingredients. Slowly add the dry ingredients to the wet, being careful to not over mix. Be gently with the batter! It will be a bit lumpy, but that is normal.
Bake for 12-15 minutes, or until a toothpick inserted in the middle comes up with a few moist crumbs. Let cool 1-2 minutes in the pans, then let completely cool on a wire rack. Be careful to not over bake the muffins, as this leads to dry, crumbly muffins. This recipes makes about 1 dozen large muffins, or 1 1/2 dozen medium sized muffins.
These muffins are pretty versatile and you can easily add in various mix-ins like mini chocolate chips, peanut butter chips, or nuts!
