-1 whole wheat bagel (the sprouted wheat bagels from Trader Joe’s are my FAVORITE)
-1/2 roma tomato, sliced
-1/2 avocado, sliced
-1 cup roasted or sauteed bell peppers (I used a mixture of yellow, red, and orange. I like mine to be really warm and slightly soft inside my panini so I saute them before hand, but you can always just add them raw)
-sprouts
-white bean & basil hummus & roasted red pepper hummus (or any kind you really want, but those are my two favorites, I get them at T Joe’s)
DIRECTIONS
Cut the bagel in half and spread hummus on the inside of both bagel halves. Add veggies, close up and grill away for about 30 seconds on each side, or until grill marks form.
I don’t have a panini grill. But I do have a grill pan that I use on the stove. I place a small wood cutting board on top of the bagel panini and press down firmly for about 30 seconds. Flip it over and hold down for about another 30 seconds (depends on how crispy you like your bread). Be sure not to press to hard or else the hummus makes the veggies move around and they’ll end up spewing out the side and make a mess.
