Fall is in the air, but this recipe from Samantha Hartzell is perfect for those lingering days of summer before autumn officially begins!
Ingredients:
1-2 fresh, thinly sliced tomatoes (any variety that isn’t too juicy works great)
8 slices of fresh mozzarella
4 slices french or ciabatta bread
fresh basil, thinly sliced (about 4-5 leaves)
salt & pepper to taste
butter
Parmesan cheese, to taste
Lay each slice of bread on a baking sheet and spread with butter or garlic butter.
Top each slice with 2 slices of fresh mozzarella and a sprinkle of Parmesan.
Place under the oven broiler for 4-6 minutes, or until the cheese is well melted, bubbly, and starting to brown. Remove from oven and immediately top with tomato slices, sliced basil, and salt and pepper. Serve immediately. Serve 2 (2 slices per person).
These fresh sandwiches are perfect paired with grilled chicken & a large tossed salad. They can also be served as an appetizer or for a light lunch.
