I have just been dying to share this post with you guys!!! Maybe it’s because I’m just all heart eyed over the winter feel of these pictures, or maybe it’s because of how fun, festive and full of flavor this breakfast is!! The best part? It’s a crowd-winning meal that will have the kids asking for more and all the guys will wipe the pan clean, guaranteed!!! :)
Eggs are the easiest, go-to breakfast staple in our house. Combined with some fun fruit and a little ketchup or hot sauce for the eggs, and you’re set! Ok, maybe you’ll need a warm mug of coffee or chai, too….or maybe that’s just me ;)
If I can encourage you of one thing this season, it’s to savor it all. Not just the smells or the flavors of the food, but to savor the moments and cherish every one. Hug a little longer, snuggle up next to the fire, have a few extra snacks, and watch a few too many Hallmark movies. Treasure every bit of it. :)

Scrambled Eggs + Fresh Fruit | Serves 5
1 honeydew or golden melon | cut into chunks | cut both ends of honeydew off, stand up on end, slice the rind around the honeydew off, cut in half, scoop out the seeds, and slice into strips before cutting into chunks! Easy!
2 pomegranates, seeded | cut off both ends, lightly slice through the rind and break into chunks, and pull seeds out!
1 lime, juiced | pour a little juice over the fruit for a little pucker ;)
3 bananas, sliced into rounds
For the eggs:
18 eggs, cracked into a bowl and whisked
2 tsp garlic powder
salt + pepper to taste
6 sausages, sliced into rounds | I used the Trader Joes spicy jalapeno chicken sausage without the casings…alllll the yum!
shredded pepperjack cheese
3 cups fresh spinach, optional
chopped tomato, optional
sliced avocado, optional
minced red onion, optional
fresh cilantro, optional
Whisk all of the eggs together and pour into a greased nonstick pan, over medium heat. Stir a few times until the eggs start to scramble. Once almost done scrambling (the eggs won’t look “wet” anymore), throw in the sliced sausages and spinach and put the lid on over low heat for 1-2 minutes. Top with the shredded cheese and other toppings and put the lid back on. This will allow the steam to melt the cheese!
Serve with fresh salsa, ketchup, sour cream, sriracha, or the whole kitchen sink!
