This is absolutely hands DOWN one of my favorite go-to meals when I want something to throw in the crockpot or a soup pot and just forget about it! Well, until I eat it ;)
Not only is it completely filling and so comforting, it’s something your wallet will be happy with too! A huge pot costs roughly $3.50 and that can feed a crowd, or leftovers for days! I’ll make it so often that sometimes I forget I’m cooking for two…and we have loads of split pea soup. Plenty to go around! ;) It’s so incredibly yummy, and split peas are so easy to cook! Throw in some root veggies and chicken stock, and a little turkey bacon or ham and it’s a winner!! Enjoy!!!
Split Pea + Turkey Ham (or bacon) Soup :)
Serves 6
2.5 cups green split peas
3 large carrots, diced
1 large yellow or red onion, diced
1 large russet potato, diced
2 cups diced turkey ham or turkey bacon
3-4 TBS chicken bullion (Better Than Chicken is the best! Sold at Costco and a variety of grocery stores)
10-12 cups water, or more as needed
4 cloves garlic, chopped finely OR 2 TBS granulated garlic
salt + pepper to taste (the split peas will need salt!)
feta, for garnish :)
olive oil, as needed
In a large pot, sautee the carrots, onions, and potato just for a minute. Add in split peas and garlic. Toss. Stir in chicken base, ham, and water. Let come to a boil and then simmer over a medium-low heat for an hour, stirring occasionally, or until the peas start to break down. Add in salt and pepper to taste, and more water as you stir, if needed. Pour into a mug and top with feta and enjoy!! :) Curl up by the fire with a book or watch a fun movie. It’s the perfect rainy day dinner!
